AW Patisserie 由Alison Wah 成立。Alison Wah 於世界手屈一指的法國巴黎藍帶廚藝學院(Le Cordon Bleu Paris)接受正統糕餅培訓,並於2016年完成甜點文憑課程。她從小便對烘焙產生濃厚興趣,每逢同學好友生日都會先查詢壽星的喜好,再度身訂做生日蛋糕慶祝,連考試期間也不例外。大學畢業後,同學們紛紛投向與學科相關或政府工作,偏偏Alison選擇加入了全港規模最大的餐飲企業當採購,為的便是更深入了解食材本身及其原產地。她深信,食物是客人要吃進肚子裏,食材品質和味道從來都是最優先考慮。對食材選取建立基礎後,Alison遠赴巴黎- 法國甜點聖地,在這間擁有120年歷史的藍帶廚藝學院學習正宗甜點手藝,並有機會參加如Pierre Hermé座談會,這段日子令她完全浸淫於法式甜點的氛圍下。畢業後回流香港,並於海景嘉福洲際酒店跟法國總廚Cedric De Lima e Sousa工作和學習,把課堂理論得以實踐和應用。Alison的夢想是為客人做甜點,她認為吃甜點蛋糕大多是喜慶和值得紀念的時刻,分享時又可拉近人與人之間的關係,因此Alison便創立了 AW Parisserie,繼續以優質食材為客人度身訂造「好看又好吃」、把地道風味糅合法式傳統手法的蛋糕和到會甜點,造就「Moment to Remember」。
